This lunch has become my go-to because it’s **easy to prepare**, **packed with protein**, and loaded with fresh flavors. Plus, it’s super customizable—you can add or swap ingredients based on what you have at home or your cravings. The best part? It comes together in just a few minutes!
**Ingredients**
– 1 can of **chickpeas** (drained and rinsed)
– 1 ripe **avocado**, diced
– 1 cup of **cherry tomatoes**, halved
– ½ cucumber, sliced
– A handful of **spinach** or mixed greens
– 2 tablespoons of **olive oil**
– 1 tablespoon of **lemon juice** (freshly squeezed is best)
– Salt and pepper, to taste
