Ingredients:
- 2 ripe-yet-firm mangoes, julienned or thinly sliced
- 1 small red chili (or more if you like it hot!), thinly sliced
- 1/2 red onion, finely sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, crushed (optional for crunch)
- Juice of 1–2 limes
- 1 tbsp soy sauce or fish sauce (depending on preference)
- 1 tsp brown sugar or coconut sugar
- Optional: grated carrot or cucumber ribbons for extra crunch and color
Quick & Easy Instructions:
- Prep the mangoes: Peel and slice the mangoes into thin strips or matchsticks.
- Mix the dressing: In a small bowl, stir together lime juice, soy/fish sauce, and sugar until dissolved.
- Combine: Toss mango, red onion, chili, and cilantro in a large bowl.
- Dress it up: Pour the dressing over the salad and toss gently to coat.
- Top it off: Sprinkle with crushed peanuts just before serving.
Customize It Your Way
- Like it tangier? Add more lime juice.
- Want extra crunch? Add shredded cabbage or sliced bell peppers.
- Need protein? Toss in grilled shrimp or tofu.
