- 2 celery stalks, chopped
- 1 zucchini, diced (optional)
- 4 cups low-sodium vegetable or chicken broth
- 1 (14.5 oz) can diced tomatoes, with juice
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 cups fresh baby spinach or kale
- 9 oz (about 2 cups) cheese tortellini (fresh or frozen)
- Grated Parmesan cheese for garnish (optional but delicious)

1. Sauté the Aromatics
In a large soup pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté for 5–7 minutes, until vegetables begin to soften.
2. Add Broth and Tomatoes
Pour in the broth, diced tomatoes (with their juices), and Italian seasoning. Season with a little salt and pepper.
Bring to a boil, then reduce heat and let simmer for 10 minutes.
3. Add Tortellini and Spinach
Stir in the tortellini and cook according to package instructions—usually about 5–7 minutes, until tender.
