- 2.5 to 3 pounds baby potatoes (red or Yukon gold work best), halved or quartered
- 1 packet Lipton Onion Soup Mix (or any onion soup mix)
- 1/4 cup olive oil or melted butter (your call!)
- Optional: 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chopped fresh parsley (for garnish)

- Prep the Potatoes
Wash and cut the potatoes into halves or quarters, depending on size. You want them bite-sized so they cook evenly and soak up all that flavor. - Toss with Seasoning
In a large bowl, combine the potatoes, onion soup mix, olive oil or melted butter, and any optional seasonings. Stir until everything is well coated. - Load the Slow Cooker
Pour the seasoned potatoes into your slow cooker and spread them out evenly. - Cook Low & Slow
Cover and cook on LOW for 4â5 hours or HIGH for 2â3 hours, until the potatoes are fork-tender. - Serve & Enjoy
