- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar (plus more for rolling)
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup finely chopped pecans (toasted for extra flavor)

- Preheat & Prepare:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. - Cream the Butter & Sugar:
In a large bowl, cream the softened butter with 1/2 cup of powdered sugar until light and fluffy. Mix in the vanilla extract. - Mix Dry Ingredients:
Stir in the flour and salt until combined. Fold in the chopped pecans. The dough will be a bit crumbly — that’s normal! - Shape the Cookies:
Scoop about 1 tablespoon of dough and roll it into a ball. Place on the prepared baking sheet, spacing them about 1 inch apart. - Bake:
Bake for 12–15 minutes, or until the bottoms are lightly golden. The tops should remain pale. - Coat in Sugar:
Let the cookies cool slightly (about 5 minutes), then roll them gently in powdered sugar while still warm. Place them on a wire rack to cool completely. - Final Dusting:
Once cooled, give the cookies one last roll or dusting of powdered sugar for that perfect snowball effect. -
