- 4–5 cups diced potatoes (Yukon gold or red work best)
- 2 cups cooked chicken (shredded or cubed — rotisserie works great)
- 1 packet ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- ½ cup shredded mozzarella (optional for extra gooeyness)
- 6 slices cooked bacon, crumbled
- 2 tablespoons olive oil

- Prep the potatoes
Preheat oven to 400°F (200°C). Toss the diced potatoes with olive oil, ranch seasoning, salt, and pepper. Spread them out in a greased 9×13-inch baking dish. - Bake the potatoes
Bake for 25–30 minutes, or until the potatoes are starting to get tender and golden brown. - Add chicken and cheese
Remove the pan from the oven. Sprinkle cooked chicken and half of the crumbled bacon over the potatoes. Top with shredded cheese. - Finish baking
Return to oven and bake for another 10–15 minutes, until the cheese is melted and bubbly. - Top & serve
Sprinkle with remaining bacon, green onions, or parsley. Serve hot and watch it disappear.
