You’ll need just a handful of simple ingredients:
- 4 medium russet potatoes, washed and cut into thin fries
- 2 tablespoons olive oil
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried oregano (or Italian seasoning)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)

- Preheat the oven:
Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil. - Prepare the potatoes:
Cut the potatoes into even-sized sticks. For extra crispiness, soak them in cold water for 20–30 minutes to remove excess starch, then pat dry completely with paper towels. - Season:
In a large mixing bowl, toss the potato sticks with olive oil, garlic powder, paprika, oregano, salt, and pepper. Add the Parmesan cheese and toss again to coat evenly. - Bake:
Spread the fries in a single layer on the prepared baking sheet. Avoid overcrowding — this helps them crisp up nicely.
Bake for 25–30 minutes, flipping halfway through, until golden brown and crisp. - Serve:
Remove from the oven and sprinkle with a little extra Parmesan and fresh parsley. Serve hot with your favorite dipping sauce — think garlic aioli, ketchup, or spicy sriracha mayo. -
