🥔 What Are Mississippi Mud Potatoes?
The name might make you laugh, but once you try them, you’ll be hooked. Just like Mississippi Mud Pie, this dish gets its name from its rich, indulgent nature — these potatoes are anything but dainty!
They’re a delicious blend of diced potatoes, crispy bacon, creamy sour cream, and tons of cheese, all baked until hot, bubbly, and golden brown on top. Basically, if loaded baked potatoes and cheesy casserole had a Southern baby — this would be it.
🌾 Ingredients
- 2 lbs russet or red potatoes, scrubbed and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese (plus more for topping)
- ½ cup shredded mozzarella cheese
- ½ cup mayonnaise
- 6 slices of bacon, cooked and crumbled
- ½ cup chopped green onions (optional)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
🔥 How to Make It
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook the potatoes:
- Boil the diced potatoes in salted water for about 10–12 minutes, until fork-tender. Drain well.
- Mix the magic:
- In a large bowl, combine sour cream, mayonnaise, cheddar cheese, mozzarella, bacon, green onions, garlic powder, salt, and pepper.
- Add in the cooked potatoes and gently toss to coat.
- Bake:
- Spread the mixture evenly into your prepared dish.
- Sprinkle extra cheese and bacon bits on top for good measure.
- Bake uncovered for 25–30 minutes, or until bubbly and golden brown.
- Garnish & serve:
- Sprinkle with fresh green onions or parsley before serving.
