Ingredients
- 1 pound ground beef
- 1 packet taco seasoning mix
- ¾ cup water
- 1 large head of iceberg lettuce, chopped
- 2 cups cherry tomatoes, halved
- 1 (15 oz) can black beans, rinsed and drained (optional)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese (optional)
- 1 (10 oz) bag nacho cheese Doritos, lightly crushed
- 1 cup Catalina dressing (or use ranch or French dressing if preferred)
- ½ cup sliced black olives (optional)
- ½ cup diced red onion (optional)
- Sour cream, avocado, or jalapeños for topping (optional)
Instructions
- Cook the Beef
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Stir in the taco seasoning and water, and simmer for about 5 minutes, until thickened. Remove from heat and let cool slightly. - Assemble the Salad
In a large serving bowl, combine the chopped lettuce, tomatoes, black beans, cheese, olives, and red onion. - Add the Beef and Dressing
Add the cooled taco-seasoned beef to the salad. Pour over the Catalina dressing and toss gently to combine. - Add the Doritos
Just before serving, add the crushed Doritos and toss again lightly — this keeps them crunchy and full of flavor. - Serve and Enjoy!
Serve immediately with optional toppings like sour cream, avocado slices, or jalapeños for extra flavor and flair.
