½ cup shredded cheddar or mozzarella cheese (or a mix of both)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
Salt and black pepper, to taste
1 cup all-purpose flour
2 large eggs, beaten
1 ½ cups breadcrumbs (plain or seasoned)
Vegetable oil, for frying (or baking option below)
Instructions
Prepare the Chicken Mixture
In a large bowl, combine ground chicken, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well blended.
Shape the Nuggets
Using your hands, form small nugget-sized pieces (about 1 ½ inches wide). Place them on a parchment-lined tray.
Coat the Nuggets
Roll each nugget in flour, dip into the beaten eggs, then coat with breadcrumbs. For extra crunch, double-dip by repeating the egg and breadcrumb coating.
Fry or Bake
To Fry: Heat about ½ inch of oil in a large skillet over medium heat. Fry nuggets in batches for 3–4 minutes per side or until golden brown and cooked through.
To Bake: Place coated nuggets on a baking sheet lined with parchment paper. Lightly spray with oil and bake at 400°F (200°C) for 18–20 minutes, flipping halfway through.
Serve Hot
Serve warm with your favorite dipping sauces — ketchup, ranch, honey mustard, or even spicy mayo.
Tips for Perfect Cheesy Chicken Nuggets
Use cold cheese: It helps the nuggets hold their shape and keeps the cheese from leaking out during cooking.
Mix up your cheeses: Mozzarella gives you a perfect melt, while cheddar adds a sharper flavor.
Make them ahead: Shape and bread the nuggets, then freeze them for easy weeknight meals — just bake straight from frozen!
