- 4 large eggs
- ½ cup heavy cream
- 1 cup shredded cheddar cheese (plus more for topping)
- ½ cup shredded mozzarella cheese

Instructions
- Cook the Bacon
In a large skillet, cook chopped bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon grease in the pan. - Brown the Beef and Onions

In a medium bowl, whisk together eggs and heavy cream. Stir in the shredded cheddar and mozzarella cheeses. - Assemble the Casserole
Spread the beef mixture evenly in a greased 9×9-inch baking dish. Pour the egg and cheese mixture over the top. Sprinkle with cooked bacon and a bit more cheese. - Bake
Preheat oven to 350°F (175°C) and bake for 25–30 minutes, or until the casserole is set and golden on top. - Serve
Let cool slightly before slicing. Garnish with green onions, extra pickles, or a drizzle of sugar-free ketchup if desired.
