The Heart of Southern Cooking

In the South, dressing (never “stuffing”!) is more than a side dish — it’s the soul of the meal. Every cook has their own version, and no two recipes are ever quite the same. But Mama’s cornbread dressing? That’s the one everyone asks for.

Moist but never mushy, buttery but balanced, and seasoned just right — it’s that perfect blend of cornbread, broth, and herbs that keeps everyone coming back for seconds. And while the recipe is simple, the magic is in the love and care that goes into making it.

Ingredients

  • 6 cups crumbled cornbread (homemade or store-bought)
  • 4 slices day-old white bread, torn into pieces
  • 1 medium onion, finely chopped
  • 2 stalks celery, finely chopped
  • 2–3 cups chicken or turkey broth (as needed for moisture)
  • 2 large eggs, lightly beaten
  • ½ cup butter, melted
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried sage (adjust to taste)
  • Salt and black pepper, to taste

Instructions

  1. Preheat the Oven
Preheat oven to 350°F (175°C). Lightly grease a large baking dish or casserole pan.
  2. Cook the Vegetables
In a skillet, melt a bit of butter and sauté the onion and celery until soft and fragrant, about 5 minutes.
  3. Combine the Ingredients
In a large mixing bowl, combine crumbled cornbread, white bread pieces, sautéed vegetables, poultry seasoning, sage, salt, and pepper. Stir to blend evenly.
  4. Add Broth and Eggs
Pour in enough broth to moisten the mixture — it should be soft but not soupy. Stir in the beaten eggs and melted butter until well combined.
  5. Bake Until Golden
Pour the dressing into the prepared baking dish and bake for 35–45 minutes, or until the top is golden brown and slightly crisp.
  6. Serve Warm
Serve hot alongside turkey, ham, or roasted chicken — and don’t forget the gravy!

Mama’s Tips for the Best Cornbread Dressing

  • Use day-old cornbread: Slightly dry bread absorbs flavor better.
  • Taste before baking: Adjust the seasoning — Mama always said, “If it doesn’t taste good in the bowl, it won’t taste good in the oven.”
  • Add a personal touch: Some folks stir in a handful of cooked sausage, chopped boiled eggs, or even a little cream of chicken soup for extra richness.
  • Make it ahead: This dressing reheats beautifully — perfect for busy holiday mornings.
