Prepare the Vegetables
Slice onions and bell peppers. Mince garlic.
Sear the Brats (Optional but Recommended)
Heat olive oil in a skillet over medium heat. Brown the bratwurst on all sides for 3–4 minutes. This step adds extra flavor but can be skipped if you’re short on time.
Add to Slow Cooker
Place the sliced onions, bell peppers, and garlic in the bottom of the slow cooker. Arrange the bratwurst on top.
Add Beer and Seasoning
Pour the beer over the brats and vegetables. Sprinkle with smoked paprika, salt, and pepper.
Cook
Cover and cook on low for 4–6 hours, or on high for 2–3 hours, until the bratwurst are cooked through and the vegetables are tender.
Serve
Serve the bratwurst with peppers and onions on their own, or pile them into buns for a classic sandwich. Mustard or your favorite condiments add an extra punch.
