Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts (finely chopped or ground)
  • 2 large eggs
  • 3 tablespoons mayonnaise (or Greek yogurt for a lighter option)
  • ½ cup shredded mozzarella or cheddar cheese
  • ¼ cup finely chopped green onions (or parsley)
  • 2–3 tablespoons all-purpose flour (adjust for texture)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (olive oil, canola, or vegetable oil)

Instructions

  1. Prepare the Chicken:
Finely chop the chicken breasts into small pieces, or pulse them a few times in a food processor (don’t puree — you want small chunks for texture).
  2. Mix the Batter:
In a large bowl, combine the chopped chicken, eggs, mayonnaise, shredded cheese, green onions, flour, garlic powder, onion powder, salt, and pepper.
Stir well until all ingredients are evenly mixed. The mixture should be thick but spoonable.
  3. Heat the Pan:
Add a few tablespoons of oil to a large skillet and heat over medium heat.
  4. Form the Fritters:
Spoon about 2 tablespoons of the mixture per fritter into the hot skillet. Flatten slightly with the back of a spoon.
  5. Cook to Perfection:
Fry the fritters for 3–4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  6. Drain and Serve:
Transfer to a plate lined with paper towels to remove excess oil. Serve warm with your favorite dipping sauce.
