🧺 Ingredients

For the Salad Layers:

  • 3 cups cooked rotini or bowtie pasta, cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup fresh or frozen peas, blanched
  • 1 cup shredded carrots
  • 1 cup chopped bell peppers (any color)
  • ½ cup thinly sliced red onion
  • 1 cup baby spinach or mixed greens
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ cup crumbled feta (optional)

For the Creamy Herb Dressing:

  • 1 cup mayonnaise or Greek yogurt
  • Âź cup sour cream
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill or basil, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Optional Garnish:

  • Extra herbs, sliced green onions, or a sprinkle of Parmesan

🥣 Directions

  1. Prepare the Dressing:
In a small bowl, whisk together the mayonnaise (or yogurt), sour cream, lemon juice, herbs, garlic powder, salt, and pepper. Adjust the seasoning to taste and refrigerate until ready to use.
  2. Cook the Pasta:
Cook pasta according to package directions until al dente. Drain, rinse under cold water, and toss lightly with a drizzle of olive oil to prevent sticking.
  3. Assemble the Layers:
In a clear trifle dish or large glass bowl, layer the ingredients in the following order (or your own creative pattern):

    • Pasta
    • Tomatoes
    • Cucumbers
    • Peas
    • Carrots
    • Bell peppers
    • Red onion
    • Spinach
    • Cheese and feta
  4. Top with Dressing:
Spread the creamy herb dressing evenly over the top layer. This “seals” the salad and keeps everything fresh.
  5. Chill and Serve:
Cover with plastic wrap and refrigerate for at least 2 hours (or up to overnight). Just before serving, garnish with extra herbs or cheese.

🌿 Tips for Success

  • Use Fresh Herbs: Fresh dill, basil, or parsley make all the difference in the flavor and aroma.
  • Customize It: Add grilled chicken, shrimp, or even chickpeas for a heartier version.
  • Presentation Tip: Use a glass trifle dish to show off those colorful spring layers — it’s as pretty as it is tasty!
  • Make It Ahead: This salad tastes even better after chilling, as the flavors have time to meld beautifully.
