Ingredients
- 1 sheet puff pastry (store-bought or homemade)
- ½ cup sugar
- 2 tablespoons cornstarch
- 1 cup whole milk
- 3 large egg yolks
- ¼ cup fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons unsalted butter
- Powdered sugar for dusting
- Optional: fresh berries or mint for garnish
Instructions
- Prepare the Pastry:
Preheat the oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface and cut into squares or desired shapes. Place on a baking sheet lined with parchment paper. Bake for 12–15 minutes, or until golden brown. Let cool completely. - Make the Lemon Cream Filling:
In a medium saucepan, whisk together sugar and cornstarch. Gradually add milk, then cook over medium heat until slightly thickened. In a separate bowl, lightly beat egg yolks, then slowly whisk in a small amount of the hot milk mixture to temper the eggs. Return the egg mixture to the saucepan and cook, stirring constantly, until thick and creamy. Remove from heat and stir in lemon juice, lemon zest, and butter. Allow to cool slightly. - Assemble the Pastries:
Once the pastry has cooled, pipe or spoon the lemon cream onto each piece. Dust with powdered sugar and garnish with fresh berries or mint if desired. - Serve:
Enjoy immediately, or chill for a slightly firmer, creamier texture. -
