Ingredients
- 1 ½ lbs (about 5–6 links) Italian sausage — sweet, mild, or hot
 - 2 tablespoons olive oil
 - 1 large red bell pepper, sliced
 - 1 large green bell pepper, sliced
 - 1 large yellow bell pepper, sliced (optional for extra color)
 - 1 large onion, sliced
 - 3 cloves garlic, minced
 - 1 (14.5 oz) can diced tomatoes (or tomato sauce for a smoother texture)
 - 1 teaspoon dried oregano
 - ½ teaspoon dried basil
 - Salt and black pepper, to taste
 - ¼ teaspoon crushed red pepper flakes (optional for a little heat)
 - ¼ cup dry white wine or chicken broth (optional, for deglazing the pan)
 - Fresh parsley, chopped (for garnish)

Instructions
- Brown the Sausage:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage links and cook until browned on all sides, about 5–6 minutes. Remove from the skillet and set aside. (They don’t need to be fully cooked yet.) - Sauté the Vegetables:
In the same pan, add sliced onions and bell peppers. Cook for 5–7 minutes until they begin to soften. Add garlic and cook for another 30 seconds until fragrant. - Deglaze the Pan (Optional):
Pour in the white wine or chicken broth and scrape up any browned bits from the bottom — that’s where the flavor is! - Add Tomatoes and Seasonings:
Stir in the diced tomatoes (or tomato sauce), oregano, basil, crushed red pepper, salt, and black pepper. Mix well to combine. - Simmer Everything Together:
Return the browned sausages to the skillet. Reduce heat to low, cover, and let simmer for 15–20 minutes, or until the sausages are fully cooked and the sauce is rich and flavorful. - Serve Hot:
Garnish with chopped parsley and serve warm.
