Ingredients
- 2 ½ lbs baby red potatoes (or Yukon golds), washed and cut into chunks
 - 8 slices bacon, cooked and crumbled
 - 2 cups shredded cheddar cheese (divided)
 - 1 packet ranch dressing mix (1 oz)
 - ½ cup sliced green onions (optional, for garnish)
 - 2 tablespoons butter, cut into small cubes
